Gotiti is grown in one of the most famous coffee-producing regions in the world -- Yirgacheffe. The high elevation of the region leads to coffee beans that are small and dense; this makes for a smaller margin of error during roasting, but produces deep and complex flavor.
Just like the rest of Ethiopia, Yirgacheffe is divided into many districts, or woredas, and woredas are divided into communities, or kebele. Within the Gedeb woreda lies the Gotiti kebele; coffee farmers in this area bring their coffee cherries to the Gotiti washing station either by mule or on foot. The washing station process between 500-600 tons of coffee each year.
This coffee is a mixed heirloom variety, meaning the seeds have been passed down within families for generations. Through both commitment to tradition and meticulous washing, fermentation, and drying processes, a beautifully developed fruity and floral profile is achieved. Sweet and bright rose and cherry notes dance atop an earthy and floral landscape reminiscent of rooibos tea.
